Slow-rendered guanciale pasta

Cut guanciale into even pieces and begin in a cool pan. Raise the heat gradually so the fat renders without burning the peppered exterior. Remove the crisped pieces, build the sauce with the rendered fat, then return the guanciale near serving.

Crisp pancetta, eggs and warm bread

Use thin slices of Pancetta Tesa in a dry pan over moderate heat. Turn as the edges begin to color. Serve alongside eggs, warm bread and a small honey drizzle.

Render diced Italiano Romano Classico, remove excess fat if necessary, then add tomatoes, garlic and greens. Finish with pepper and serve over rice, pasta or toasted bread.
